Honey Ranch

Ranch doesn't make its way into this house very often. And I can tell you that ranch dip or packets never, ever, ever come through this door. But every now and again, I decide to make delicious honey "buttermilk" ranch for sweet potato fries.  It starts with fresh parsley from the garden, garlic too. 

Somewhere between white vinegar, a whisk and honey, sauce magic happens.  This is one of those sauces that you will want to triple triple or quadruple because it disappears. You can store some in a little jar for another day too.
The Recipe


The Goods:
  • 1 small garlic clove
  • 1 T. scallion (the dark green portion)
  • 1 T. fresh parsley
  • 1 t. lemon juice
  • ⅓ c. buttermilk (add 1 teaspoon of apple cider vinegar to a measuring cup and add enough almond milk to equal ⅓ cup; let sit 5 minutes)
  • ⅓ c. greek yogurt
  • ¼ t. salt
  • ¼ t. black pepper
  • ¼ t. onion powder
  • honey to sweeten.


Directions:
1. Mince the garlic. 
2. Chop the scallion (great from the garden too).
3. Make the buttermilk.
4. Whisk it all together


Add no more than a tablespoon of honey.  Sweeten to taste. Chill before serving. Serve this with my delicious, simple sweet potato fries or turkey burgers.
