Toddler-Approved Vegan Candied Sweet Potatoes

The Recipe
Ingredients

• 2 sweet potatoes, peeled and sliced thin
• 1/4 cup brown sugar
• 1 tsp molasses
• 1/2 tsp Salt
• 1 tbps. lemon juice
• Zest from a lemon
• 1/2 tsp freshly minced ginger
• Pepper, to taste
• Vegan butter, for dabbing
• Parsley, for garnish

 
Directions

1. Preheat the oven to 400 F.
2. Stir together brown sugar, molasses, salt, lemon zest, lemon juice, ginger, and pepper in a bowl.
3. Toss the sweet potatoes in the mixture. Coat well.
4. Layer in a greased baking dish. Dot with butter. Cover the dish with foil.
5. Bake for 30-40 minutes.
6. Serve with parsley garnish.
