Vegan Peanut Butter Fudge

Fudge! I came across a little fudge shop near Seaside, Oregon this weekend and I got inspired to make fudge that didn't make me break out or give the kids a whopping headache! 

I did some research in old cookbooks, looking at the standard ingredients. After a bit of time, I developed a peanut butter base and stuck to simple ingredients like coconut oil and maple syrup. 
Recipe
Ingredients
For the Base:
  • 1 1/2 cups natural peanut butter, crunchy or creamy
  • 5 tablespoons melted coconut oil 
  • 4 tablespoons maple syrup
  • 1/4 teaspoon salt

For the Swirl:
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • 2 tablespoons melted coconut oil

Directions
  1. Line a 9-inch square baking dish (preferably glass) with parchment paper and set it aside. 
  2. For the fudge base, mix together the peanut butter, coconut oil, maple syrup, and salt. Smooth the fudge into the baking dish. Set aside while you make the swirl.
  3. Whisk together the cocoa powder, maple syrup, and coconut oil in a bowl. You may need to heat over a doubler boiler to get it to go smooth.
  4. With a fork, drizzle the fudge over the peanut butter. Place it in fridge to chill for an hour.
  5. Slice the fudge into squares and serve cold.
